Côte de Nuits
Côte de Nuits forms the northern half of the Côte d’Or, between Dijon and Nuits-Saint-Georges. Almost every red grand cru of Burgundy lies on this strip of barely twenty kilometres. The slope faces largely east, so the morning sun warms the vineyards.

Grape and style
The red wines of the Côte de Nuits are made from pinot noir, a thin-skinned grape that reflects its surroundings with particular accuracy. The result is generally a wine with a bright colour, plenty of aroma and fine tannins, carried by lively acidity and a long finish. Typical aromas are red and black fruit, roses, violets and spices, and with the years mushrooms, forest floor and leather.
The style differs from village to village: from powerful and dark to silky and fragrant. White wine from chardonnay is rare here and occurs in only a few places.
Location and soil
The Côte de Nuits is the northern part of the Côte d’Or, the ridge in Burgundy that extends south of Dijon. The vineyards lie on a narrow, east-facing slope that catches plenty of morning sun and drains well. The villages lie like a string of pearls along the foot of the slope.
The subsoil consists of limestone and marl, with varying amounts of clay and stony debris from plot to plot. The climate is moderately continental with cold winters and a changeable growing season, so that vintages differ clearly from one another. Higher up the slope lies the transition to the Hautes-Côtes, where the grapes ripen later.
Classification and rules
Burgundy works with a quality pyramid that looks not at the wine house but at the origin of the grapes. At the bottom are the regional appellations, above them the village appellations, then the Premier Cru plots and at the top the Grand Cru vineyards. Each plot, called a climat in Burgundy, has its own status.
The Côte de Nuits is the region with the greatest concentration of red Grand Crus. Well-known villages are Gevrey-Chambertin, Chambolle-Musigny and Vosne-Romanée, each with its own character.
Ageing and serving
Simpler village wines are often pleasant after just a few years, while Premier Cru and especially Grand Cru reward many years of patience. Good bottles then acquire a silky texture and layered aromas of forest, spices and dried fruit. Pour old bottles carefully, because of possible sediment; young wines sometimes benefit from brief aeration.
Serve red Côte de Nuits at around 15 to 17 °C in a generous glass with a wide bowl. The wine goes well with duck, chicken, veal, poultry and mushrooms, and with Burgundian cheeses such as Époisses.
